That’s why I love these muffins, they are a perfect sweet treat on a hot summer day.
The ingredients were things I already had on hand in the pantry. Which all the cooks know is a major plus.
I made them in less than an hour and they truly hit the spot after a morning of hectic play with my very busy and energetic two-year-old.

Tami’s Tips
Shred carrots the night before for faster prep, but if you are really in a pinch store-bought is also a nifty option.
Using muffin liners saves time with clean up.
Using applesauce allows the muffins or any baked goods for that matter to stay fresher a little longer and to be more moist due to its water content.
