
What’s mutton?
My husband asked when he heard what was for dinner.
I had just come home from our local international food market with treasures to make your palette sing. Things we don’t eat often but crave always. Things that speak to both our caribbean roots.
Today’s delicacy would be goat stew aka mutton.
I know. I know. Goat! Aah! Gross!
No, no it’s not. If you’ve never tried it you’ll never understand.
To all my goat stew lovers out there. You know (wink).
For the rest of you, here’s the recipe. You know just in case.
Ingredients
- 1/2 lb. goat meat/mutton
- 1/2 tsp. salt
- 1/2 tsp pepper
- 1 large potato
- olive oil
- 1 tsp turmeric
- 1/2 tablespoon cumin
- 1/3 tsp onion powder
- 1/3 tsp garlic powder
- 1 cup water/ chicken stock
- 1 tsp tapioca starch/flour/cornstarch
Directions to make it
Step 1 Set instant pot to saute. Pour olive oil in pot, olive oil should lightly cover the whole surface of the pot.
Step 2 In a large bowl, season meat with salt, pepper, onion and garlic powder as well as turmeric.
Step 3 Coat the meat in seasoning.
Step 4 Place meat in instant pot and brown on all sides.
Step 5 Pour in the liquid water/stock
Step 6 Close lid and set cook time for 45 minutes
Step 7 Once the cycle is complete, follow manufacture instructions for quick release.
Step 8 Transfer mutton from instant pot to a large pot on the stovetop. Cut up the potato.
Step 9 To thicken the stew, add the potato and whatever thickening agent you prefer. I used tapioca starch. Leave the pot uncovered and let the ingredients come together to a boil.
Step 10 Cover the pot and set it to simmer for 10 minutes or until the stew reaches your desired consistency.
